Upon moving to Hong Kong in 1989, my cooking skills and love for my heritage food encouraged me to host a series of Vietnamese cooking lessons. I had the opportunity to work with Hong Kong’s 97 Group in my earlier years as a chef, and soon after collaborated with the group to open up my first Vietnamese restaurant Song from 2000-2004. It being my first concept (and it being 2000), the focus was showcasing Vietnamese cuisine in a fine-dining context.

I co-founded Noodlemi — a fast service contemporary noodle bar — in 2012 and ran it with great success until 2015. We served MSG-free and Gluten-free Vietnamese classics with my own personal touch, and made waves in the takeout & delivery world… healthy fast food in a way.

I have been working in the food and entertainment industry since 1990. As a caterer, I have the privilege of working around the globe feeding film crew, actors, creating beautiful bites for exclusive events, and menu development for restaurants and art fairs. Over the years, I have become more aware of societal health, food and environmental sustainability and our eating habits. How I cook and prepare food reflects on the social, artistic and ethical way of identifying my food. Coupling my extensive experience of elevated dining and recipes, fast service and nutritional health, I’ve specialised my services to serving good tasting food that’s good for you as efficiently as possible.
